Falafel

1 400gm can of chickpeas (you can use dried chickpeas but you'll need to be organised enough to soak them the night before)
1 onion diced
2 cloves of garlic chopped
1/2 cup of flour
1/2 cup of sunflower seeds
1 tbsp fresh parsley
1 tbsp fresh coriander
1-2 tsp ground cumin
1/4 tsp of cayenne
Olive oil

Mix the ingredients in a food processor or with a hand-held blender (this is what I use).  Heat a 1cm layer of olive oil in the fry-pan.  With your fingers, roll up the mixture into smallish balls and then flatten them into little patties for frying.  Fry them on both sides until golden.  Serve with salad.
