Kookoo Sabzi

Kookoo sabzi (or herb kookoo) is a simple dish that can be served with salad or bread, possibly as an entree. It's really easy to make, but don't forget the oil! :-)

Beat the eggs till they're all puffy (they go light yellow, but not quite white because of the yolks).

Finely grate a peeled potato and add it in

Grate the onion and add it in

pour in 1 cup of oil

add the walnuts and the barberries(zereshk), about a handful of each

add seasoning

add the herbs

stir together, then pour into a small tray lined with baking paper.

cook in 180C oven till one side is baked (looks firm)

cut into peices, turn over, and cook the other side

serve :-)
